Good Dip
I make this dip all the time and get asked for the recipe a lot, so I decided to post it here for you all to have. This is really easy and you can add/subtract as much/little as you want from the recipe to your own preferences.
Normal recipe for a medium sized bowl
(2) avocados cut into chunks (we like avocados so we use 2 where 1 is fine)
(1) can of corn, black beans, and Original Rotel all drained but not washed
(1) lime cut into halves.squeeze half while preparing and the other half before serving
(1/4) Red onion chopped (mind your fingers)
handful of cilantro chopped finely
Mix all this stuff together into a bowl and sit in the fridge for about 12 hours to a full day. Squeeze the other lime half into the dip and serve with nacho chips.

My husband of 34 years (and going) used to love to exclaim "Rotel saved our marriage!" I can't remember the story that prompted that nonsense, but he loved the responses he got. Obviously, WE think Rotel should be a staple in every pantry!
