Thanksgiving

Here's the Thanksgiving menu for our house. What's everyone else making? Got any great recipes?

Turkey(brined for 12 hours then roasted)
Dressing-made in the crockpot
Mashed potatoes with tons of butter and cream cheese and homemade gravy
Rolls
Green bean casserole
Pumpkin pie
Corn pudding
Other desserts people will bring

1) Sounds good. I have my adopted Thanksgiving family here to eat with. I'm guessing most of the same except for the cream cheese in the potatoes--they don't do that but it sounds good. I don't eat the gravy--since I don't eat meat. I buy myself a Tofurkey roast that I will make over that weekend. My contribution will be Pumpkin Gooey Butter Cake (courtesy of Paula Deen) and some no-knead homemade bread.

3) Linda, What does a Tofurkey taste like? Does it have a texture? I think I will try the cake. I happen to really like Pumkin pie but I think the cake would serve more.

4) I love cream cheese in potatoes, too. I also add sour cream. Then, I bake it in the oven for an hour.

5) Im going to attempt to make the mashed potatoes before hand and then bake them before the meal. Im hoping they still come out creamy and not dry!

7) The cake serves a good group--it's a 9x13 cake and rich too. Tofurkey reminds me of the turkey roast you get where the meat is more compressed. If you have ever eaten one of those it's roughly the same. My favorite thing to do is make the roast as directed but when it is done, cube it and use it with soup or stew like chunks of turkey. It makes a good protein addition to a veggie soup. The mushroom "giblet" gravy is good too. It's good to add to a soup or stew or use to make a gravy to add to rice or meatless meatballs for a sandwich or rice or potato addition.

8) That brings up a funny point about Thanksgiving. People think that vegetarians feel left out or have nothing to eat at the dinner but forget that most of the meal is side-dishes and dessert. The turkey is a small part. I have to pass on turkey and gravy and stuffing or dressing made with the meat parts but otherwise I have LOTS to eat. I never come away from the table wanting. LOL My friend, Carol, was sweet enough to make me dressing on the side without the meat juices or addition. But, even without that I have more than enough to eat at any Thanksgiving dinner. So, if you have friends who are vegetarians you might find they have no problem sitting down at the table and having plenty to eat.

LGrant - my daughter and her boyfriend are vegetarians so I always make the effort (or fight with my mother, rather) for a vegetarian stuffing
